New Flavors In The Canteen

Today we are in the kitchen with the Chef Muhanad who looks after the kitchen of The Canteen, located in Aloft City Centre Deira, Dubai. Having just launched a new menu, Chef Muhanad takes us through the thought process and preparing some of the dishes.

While chef Muhanad is giving out instructions in the kitchen, the sounds of knifes cutting and the sizzles of the braided chicken on the extra virgin olive oil heaping through with the simmering paneer curry in the next work station. “I am thinking Arabic. Why not even Emirati. It’s called Chicken Tahta, which is an Emirati version of a biryani. It’s simple, it’s comforting, and most importantly, filled with flavor especially in the chicken. It’s all in the crispy skin which holds all the delicious juicy flavors in the dish.”

Chef then adds:  “We want to add local flavours into our bowls. We also want to serve vegans bowls, which are our bigger focus nowadays. Our dishes promote different and unique flavours and are healthy, organic and authentic. We want to guide our guests around the world with our new variety of bowls.”


Here are the ingredients and the method to cook chicken Tahta for 4 servings:

Ingredients: 
1kg basmati rice, soaked
4 chicken breast 
5 black peppercorns
2 cinnamon sticks
3 cardamom pods
2 tbsp. ghee
2 tbsp. vegetable oil
3 onions, peeled and finely chopped
2 garlic cloves, peeled and finely chopped
2 green chili peppers (or to taste), chopped
2 tomatoes, quartered
1 tbsp. Emirati spices
4 loumi (dried lime), peeled and chopped
2 tbsp. tomato paste
1 tbsp. coriander powder
1 tbsp. cumin powder
1/2 tbsp. saffron 
1/2 tbsp. turmeric
Handful of mixed nuts for garnishing

Chicken Tahta Recipe (Emirati Version of biryani)


Method:
1. Cook the soaked rice in boiling water with the black peppercorns, cinnamon sticks, cardamom seeds and a tablespoon of ghee, until the rice is 75% cooked. Drain and set aside, adding another tablespoon of ghee to prevent the rice from sticking together.

2. Heat a couple of tablespoons of oil in a large saucepan, add the finely chopped onions, garlic and the chillies and cook over medium heat for 4-6 minutes, until softened but not coloured.

3. Add the tomatoes, Emirati spices, the loumi, tomato paste, cumin and coriander powder, saffron and approximately 50ml water. Stir well and cook for a couple of minutes.

4. Add the chicken to the pan, stirring gently and reduce the heat to low and continue to cook for a couple more minutes.

5. Heat a tablespoon of oil in a saucepan over medium heat, add the turmeric and sauté after a minute.

6. Heat a final tablespoon of oil in a large casserole dish, and half the rice to the pan and spread out over the base of the pan. Add the chicken mixture and finish with a final layer of rice. Pour over the turmeric and oil mixture, cover with a lid and cook over low heat for 10-15 minutes more, until the rice is fluffy.

Chef Muhanad is set to amaze us with delicious holiday meals, getting the turkey ready to be roasted and stuffed with tasty bites.
“I’ve decided to make simple and original Christmas recipes because the festive season is all about joyful memories with the family and nostalgic moments.”  
Inspired by traditional home-made recipes, Chef Muhanad is sharing with us the classic roasted turkey with stuffing and the correct carving procedure.

Roasted- Honey Glazed Turkey

Roasted-Honey Glazed Turkey, Christmas Recipe 

 

Ingredients

1 turkey (14 to 16 pounds)

GLAZE:
1/2 cup honey
1/2 cup Dijon mustard
1-1/2 teaspoons dried rosemary, crushed
1 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon pepper


STUFFING:
1/2 cup butter, cubed
2 cups chopped onion
1-1/2 cups chopped celery
12 cups unseasoned stuffing cubes or dry bread cubes
1 tablespoon poultry seasoning
2 teaspoons chicken bouillon granules
1 teaspoon pepper
1 teaspoon dried rosemary, crushed
1 teaspoon lemon-pepper seasoning
3/4 teaspoon salt
3-1/4 to 3-3/4 cups boiling water

Directions:

1. Place turkey on a rack in a shallow roasting pan, breast side up. Tuck wings under turkey; tie drumsticks together. Bake at 325° for 2 hours.
2. In a small bowl, mix glaze ingredients; brush over turkey. Bake 1-3/4 to 2-1/4 hours longer or until a thermometer inserted in thickest part of the thigh reads 170°-175°. Baste occasionally with pan drippings. (Cover loosely with foil if turkey browns too quickly.)
3. For stuffing, in a Dutch oven, heat butter over medium-high heat. Add onion and celery; cook and stir until tender. Add stuffing cubes and seasonings; toss to combine. Stir in enough boiling water to reach desired moistness; transfer to a greased 13-in. x 9-in. Baking dish. Bake, covered, for 1 hour. Uncover and bake 10-15 minutes longer or until lightly browned.
4. Remove turkey from oven; cover loosely with foil and let stand 15 minutes before carving. If desired, skim fat and thicken pan drippings for gravy. Serve with turkey and stuffing.
5. The roasted turkey finally served with cranberry sauce and redcurrant.   


Method to carve a turkey:

Set up a carving station including carving board, knife, and a serving platter

Remove the leg and thigh from one side
Positioning the turkey's cavity to face you and slice through into half. Then grab the thigh and push down until the thigh joint releases and pops out. Cut the thigh off, then set the leg and thigh aside on the serving platter.

Remove the breast from that same side
Slice through the skin on the top of the turkey along the breastbone from the neck joint and the wishbone first. 

Remove the wing
Pull each back, as you did the legs, and cut at the joint. Set on the platter.

Slice up the breast and thigh pieces
Grab the thighs and cut the thigh meat off the bone and cut into smaller pieces, if desired. Finally, slice the breasts crosswise at a slight angle into 1/4-inch-thick slices.

Repeat on the other half of the turkey
